Seabourn said that starting with the Seabourn Encore, it will serve an al fresco dinner on the Patio, its casual poolside grill.
The a la carte dinner, styled as “Earth & Ocean at The Patio,” was developed by consulting Chef Anton Egger.
Guests arriving at the restaurant may be welcomed with items like smoked bacon grissini (breadsticks) and house-made artisanal country bread.
Dishes will be served in simple but memorable ways, Seabourn said, such as in sizzling long-handled black iron skillets or ceramic Moroccan tagines covered to hold in moisture and smoke. The restaurant’s menus will change daily, including a different dish cooked in a tagine each night.
At lunch, the Patio will continue to serve grilled items, salads, soups and gourmet pizzas.
Debuting in May on the Encore, the new poolside al fresco dinner will be fleetwide by spring 2019. The dining experience will be included in the cruise fare.
